Our Rhythm
“Flour, spring water, sea salt, and patience. When you give bread thirty-six hours of quiet fermentation, you don’t need artificial additives or improvers.”

We opened Rye & Bramble with a simple intention: to provide Beech Road with an honest, grounding place where neighbours could pick up their morning loaf, sit with a book, or catch up over simple seasonal food that makes you feel good.

Our wild starter—affectionately named ‘Barnaby’—has been fed with organic stoneground rye flour every twelve hours since our first bake. We choose independent British millers and work directly with Cheshire dairies to ensure our ingredients have short, transparent journeys to your plate.

The Bakery Principles

The three things that anchor our kitchen every week:

  • ✓
Pure wild fermentation: Zero commercial yeast or chemical improvers in our sourdough loaves.
  • ✓
Local North West produce: Butter from Knutsford, pasture-raised eggs from Lancashire, organic dairy.
  • ✓
Low-waste bakery ethos: Yesterday’s unsold sourdough becomes croutons, breadcrumb tarts, and garden compost.

Neighbourhood Voices

Kind words from Chorlton regulars

Realistic thoughts from locals who pick up their daily loaf or spend their Saturday mornings with us.

“The seeded Danish rye is hands down the best bread in south Manchester. Stays fresh for almost a week and tastes wonderful simply toasted with salted butter.”

Liam T. Beech Road regular

“Such a calm space on busy weekend mornings. The staff are so welcoming with our greyhound, and the wild mushroom toast is pure comfort food.”

Sophie & Dan Chorlton Green

“Their cardamom buns remind me of proper bakeries in Gothenburg. No cloying sugar syrup, just brilliant spiced dough and good coffee.”
